As the author of three cookbooks and a master fermenter, he has shared the joy of this renewed craft with both passionate home cooks and the crème de la crème of the international restaurant world. His aim is simple: to bring the magic of fermentation within everyone’s reach.
His first book, Fermenting: Simple, Good & Healthy, sold over 25,000 copies and won the “Best Fermentation Book in the World” at the 2025 Gourmand Cookbook Awards. His second book, The Fermentation Cookbook: 150 Recipes, sold over 8,000 copies. His third book, Sourdough Bread: Easy Baking without Yeast, sold over 3,000 copies and placed second at the 2025 Gourmand Cookbook Awards in the Bread Baking category.
